To boost banana bread recipe with more nutrition I love to add more than 3 teaspoons of chia seeds. It is high in fiber, antioxidant, minerals and Omega-3.
The Chia Seeds taste like poppy seeds when baked inside the banana bread. Who could have thought that Banana Bread with Chia Seeds can taste this GOOD!
Quick Tips
Use grounded flax seeds instead of chia seed or any seeds of your choice, even sunflower seeds. Or don’t use them at all.
Store in airtight container inside the fridge for up to 3 days.
Freeze inside zip bag sliced, place it in a toaster to warm it up.

- ½ cup butter, room temperature
- 1 cup sugar
- 2 eggs
- 3 ripe bananas, mashed with potato masher
- 1½ cup flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 3 teaspoons chia seeds

How to make Banana Bread:
First preheat the oven to 350F. Then grease and place a cut out parchment paper into a loaf pan, set aside. Using a hand mixer, whisk ½ cup butter and 1 cup sugar.
Now, add 2 eggs and 3 mashed bananas, whisk until everything is combined.
In a different bowl, mix 1½ cup flour, 1 teaspoon baking soda, ½ teaspoon salt and 3 teaspoons chia seeds.
Add flour mixture to banana mixture, using a spatula stir until everything is combined, try not to over mix.
Pour the batter into a greased loaf pan and bake for 55 minutes. Let it cool, cut a slice and enjoy!

Hey baking this a 2nd time around. Nobody knew there was chia seeds inside. Muahahaha that’s good for me. 2nd time around I added both chia and flaxseed making it more healthy. My baby is 9 months and my daughter who is 3 yrs devoured the banana bread in 3 days. Lol wanted to try putting them in the mini muffin tin so my baby can hold it better instead of the bread crumbly. He will have more grip. Overall this is 10x better than Starbucks.

I am not a very good baker, but this banana bread (cake?) was sooooo delicious… I used baking powder because I didn’t have baking soda and couldn’t find my square tin. I put some lime drizzle on top and had to stop myself from eating the whole thing ????????
