    What is Pesto Made of?

    Pesto is made of green leafy greens like parsley or basil, cheese, nuts, garlic and oil.

    How to Use Basil Pesto?

    Use basil pesto by mixing it with cooked pasta, serve it with Ribeye Steak or use as a chicken marinate.

    How to Store Homemade Pesto?

    Store pesto in airtight container inside the fridge for up to 3 days or fill the ice cubes with pesto and freeze it, then place ice cubes into zip bag and store it in the freezer.

    How to Make Pesto From Scratch:

    To make homemade pesto, combine all pesto ingredients in food processor except oil, salt & pepper.

    How to make pesto from scratch using food processor.

    Pulse until everything is coarsely chopped. Then while the food processor is running on low speed, slowly pour in ⅓ cup of oil, more if needed.

    Turn off food processor, taste pesto and season with salt and pepper to taste. Pesto is ready!

    Pasta is cooked ready to be used in pesto pasta recipe.

    How to Make Pesto Pasta with Mushrooms:

    First, cook pasta according to package instructions.
    Skillet with mushroom and tomatoes.
    While pasta is cooking, over medium/high heat , heat 1 tablespoon of oil in large skillet. Add mushrooms and diced tomatoes and sauce for about 5-7 minutes, stirring few times.
    WIne added to the mushroom skillet.
    After pour in, ¼ cup of white wine and ½ cup of chicken broth and bring it to a gentle boil. Boil for about 4 minutes, or until sauce gets a little thicker.

    Ingredients
      

    Homemade Pesto

    • 1 cup basil & parsley leaves washed
    • ½ cup pecans or walnuts toasted
    • ¼ cup Parmesan cheese finely grated
    • 2 cloves garlic peeled
    • ⅓ cup avocado oil

    Mushroom Pasta

    • 10-12 oz. pasta shells uncooked
    • 1 tablespoon avocado oil or any oil of your choice
    • ½ cup tomatoes diced
    • 8 oz. mushrooms sliced
    • ¼ cup dry white wine
    • ½ cup chicken broth

    Instructions
     

    How to make Pesto:

    • To make homemade pesto, combine all pesto ingredients in food processor except oil, salt & pepper.

    Notes

    • Add a splash of heavy whipping cream to the sauce if you like creamy sauce.

      What ‘sauce’ are u talking about while pasta is cooking? Recipe doesn’t say anything about ‘sauce’? Are u talking about diced tomato juice?

      I made my own garlic scape pesto beforehand, so I was looking for what else I could add besides meat. Luckily, I had some local oyster mushrooms on hand as well as garden tomatoes, so this sounded like a great time to use them! I was very pleased with it!! My husband and children enjoyed it too.
