    Bacon, Egg, and Cheese Breakfast Burrito Recipe A complete breakfast all in a single burrito. A quick and easy way to feed your family a hearty, filling meal they’ll all love!

    Bacon Egg and Cheese Breakfast Burrito

    Breakfast burritos are a great way to pack in an entire breakfast in an easy, portable, and delicious wrap. Quick and easy breakfasts like burritos and breakfast sandwiches are simple ways to get my kids out the door on busy mornings!

    This one is wrapped like my quick protein-packed breakfast burrito, except instead of kielbasa and turmeric, we’re using bacon, breakfast sausage, potatoes, eggs, cheese, and cayenne pepper for heat!

    Sausage and Egg Breakfast Burrito Recipe Tips

    • If you prefer to bake the burrito rather than pan-fry it to crisp up the outside, you can bake it in the oven at 350F for 10 minutes instead.
    • To give your bacon breakfast burrito some heat, add some red pepper flakes or diced jalapenos to your eggs. Or, you can swap the breakfast sausage for spicy Italian sausage.
    • Use your favorite kind of cheese if cheddar isn’t your favorite. Colby Jack, Monterey Jack, or a Mexican blend is great.
    • Sautéed peppers and mushrooms would be a great addition!

    • For the scrambled eggs: Butter, eggs, garlic powder, cayenne pepper, and sea salt.
    • Tortillas: Use large tortillas so they’re better able to hold all the fillings. Stack them on a plate, microwave them to warm them up, and then cover them with a damp paper towel to keep them soft.
    • Potatoes: Diced pan-fried or roasted potatoes. From the freezer section or homemade breakfast potatoes can be used.
    • Cheddar cheese: Freshly grated cheddar cheese melts nicely and adds a sharp cheddar flavor.
    • Breakfast sausage: Cooked and cut into pieces.
    • Bacon: Cook them in the oven for less splatter and mess!

    How to Make Breakfast Burritos

    Step 1: Whisk eggs in a mixing bowl. Feel free to add a bit of milk or water to make them extra fluffy. This is completely optional.

    Step 2: Melt the butter in a large skillet and pour in the egg mixture. Let it sit for a minute. Use a rubber spatula to move the edges in towards the center of the eggs, doing this until the eggs are scrambled and cooked through. Season with spices.

    Step 3: Lay out a tortilla onto a flat surface or platter. Add ½ cup of fluffy scrambled eggs, ½ cup of the golden crispy potatoes, and ¼ cup of shredded cheese to the middle of the tortilla shell.

    Step 4: Next, add ¼ cup of crispy bacon bits and sausage. Take the outer edges of the burrito and fold them into the middle. Then, roll the burrito up nice and tight.

    Step 5: To the hot skillet, add a bit more butter or oil and cook the bacon egg cheese potato breakfast burrito seam side down, and once golden and crisp, flip it to brown the other side. Repeat with remaining ingredients.

    Serve with sour cream and salsa and enjoy!

    Make Ahead and Freeze

    Once the wraps are assembled, allow the filling to cool completely. Then, wrap them tightly in plastic wrap and place them in freezer bags. Keep frozen for up to 1 month. Thaw them overnight and then reheat them in the oven, the air fryer, or the microwave.

    It’s pretty filling all on its own, but we always have ours with a morning glowing green smoothie! If we’re having ours for lunch or dinner, we’ll usually pair it with a side salad. 

    How to prevent a soggy burrito?

    The best way to do this is to allow the filling (the eggs, potatoes, and bacon) to cool before adding them to the burrito.

    That way the heat won’t get trapped inside, creating steam and moisture. It’ll warm back up again once you heat it in the pan.

    Ingredients
      

    For Scrambled Eggs

    • 2 tablespoons butter
    • 6 large eggs
    • ½ teaspoon garlic powder
    • ⅛ teaspoon cayenne pepper
    • sea salt & pepper to taste

    For Burrito

    • 4 large tortillas warmed
    • 2 cups potatoes roasted or pan fried potatoes store bought or homemade
    • 1 cup cheddar cheese grated
    • 1 cup breakfast sausage cooked and cut into pieces
    • 5 slices bacon sliced and cooked

    For Serving

    • sour cream
    • salsa

    • Melt butter in the skillet over medium heat, add eggs and spices, stir and cook until eggs are cooked thru.

    To Make Burrito

    • Lay out a tortilla, and in the middle, load it up with ½ cup of fluffy scrambled eggs, ½ cup of golden potatoes, and a delightful sprinkle of ¼ cup of cheese.
    • For an extra kick, add ¼ cup of crispy bacon or savory sausage. Next, roll it up into a deliciously burrito and cook in the skillet with a bit of butter or oil until golden brown on both sides.
    • Or bake in the oven at 350F for 10 minutes. Serve with salsa and sour cream.
