    I love making this cottage cheese flatbread when I'm looking for something as flat as my homemade pita bread recipe, as fluffy as focaccia bread, but faster and easier than both of them! It’s also great as a high protein low carb alternative.

    This viral cottage cheese flatbread gained popularity quickly because it's made with just a few simple ingredients and it's ready to use in minutes for things like wraps, sandwiches, pizzas, or on its own with a simple eggplant dip on the side!

    • Eggs: Large eggs are best. You want the right amount of eggs to give the bread its structure.
    • Cottage cheese: I love Daisy brand. Use whatever level of fat you prefer.
    • Seasoning: Garlic powder (or garlic powder with parsley) and Everything But the Bagel seasoning.
    • Olive oil spray: To prevent sticking and to give the baked cottage cheese flatbread a golden color.

    How to Make Cottage Cheese Flatbread From Scratch

    Step 1: Add cottage cheese, eggs, and garlic powder to a blender. Blend until smooth and creamy.

    Step 2: Ladle the batter onto a large baking sheet lined with parchment paper and sprayed. You want even round circles about 5-6 inches wide, about 1-2 inches apart.

    Step 3: Use the back of the ladle to smooth them to an even thickness and into perfect circles. Sprinkle with Everything but the Bagel seasoning over top.

    Step 4: Bake in a preheated 350°F for 15-20 minutes until the edges are lightly golden and the center is set. If yours are thicker, you’ll need an extra 5-10 minutes to cook through.

    Step 5: Let them cool completely on the baking sheet. They’ll firm up but still be flexible enough to fold. Enjoy!

    • Blending the cottage cheese. I highly recommend using a blender to smooth out the little curds. Leaving them in can make the bread uneven.
    • Keep an eye on the oven. You want the flatbread to be cooked through, but not overcooked. Lightly golden, yet still tender.
    • Swap the seasoning. Garlic powder (with or without parsley) is a simple way to add flavor to your flatbread, but you can use what you like. Things like Italian seasoning, smoked paprika, cayenne, or Parmesan cheese can add great flavor.

    We use it for high-protein tortillas to make carne guisada tacos or shredded chicken tacos, Instant Pot birria tacos, mini pizza crusts or 3-cheese flatbread pizza, folded breakfast wraps, snack rounds to dip in hummus and Mediterranean roasted vegetables or cottage cheese. You can even use it to make low-carb sandwiches like this tomato bacon and egg sandwich.

    How long to bake cottage cheese flatbread?

    This will depend on how thick you ladle your batter onto the tray. If it’s on the thinner side, start with 15 minutes (but keep an eye on it). If it’s medium thick, leave it for 30 minutes. If it’s on the thicker side, you may need to add an extra 5-10 minutes.

    Does cottage cheese flatbread taste like cheese?

    No! It’s a mild tasting flatbread that, once cooked, gives a neutral flavor. This is why it can be used for both savory and sweet toppings.

    Ingredients
      

    • 1 cup cottage cheese
    • 2 large eggs
    • ¾ teaspoon garlic powder
    • everything sprinkle to taste

    Instructions
     

    • Blend it smooth: Blend cottage cheese, eggs, and garlic powder until completely smooth and creamy.
    • Prep your baking sheet: Line a large baking sheet with parchment paper.Spray with avocado oil spray.
    • Make perfect circles: Use a ladle or large cookie scoop to portion the batter onto the parchment. Create round circles about 5–6 inches wide. Use the back of the spoon to smooth them into even, circular shapes. Sprinkle with Everything But the Bagel seasoning over the top.
      Tip: Leave space between each circle — they spread slightly.
    • Bake: Bake at 350°F (176°C) for 15–25 minutes, depending on the thickness. They’re done when the edges are lightly golden and the center is set. (If you make them thicker, add 5–10 minutes.)
    • Cool completely: Let them cool fully on the baking sheet so they firm up and stay flexible. Enjoy as:
