Ingredients

- Plain Yogurt – The creamy base of the pudding. Greek yogurt gives a thick, tangy texture, while coconut yogurt adds a dairy-free option with a hint of coconut flavor.
- Milk – Helps thin out the yogurt for a smooth, pudding-like consistency. You can use any milk you like such as almond, oat, coconut, or dairy milk.
- Chia Seeds – The key ingredient that thickens the mixture naturally. They absorb liquid to create a creamy, pudding texture while adding fiber and healthy fats.
- Maple Syrup – Adds gentle sweetness and blends easily into the yogurt. You can adjust the amount or substitute honey or agave if you prefer.
- Strawberries – Fresh berries add a bright, fruity layer that pairs perfectly with the creamy pudding. You can also use raspberries, blueberries, or a mix of fruits.
- Honey or Maple Syrup – Sweetens the strawberry layer lightly without overpowering the natural fruit flavor.

Substitutions & Variations
Here are some of my favorite substitutions and variations:
- Yogurt Options: I like using coconut yogurt for a dairy-free version, but Greek yogurt makes it extra thick and tangy. You can also try almond or soy yogurt for a different flavor.
- Milk Choices: Any milk works here. I often use almond or oat milk, but regular dairy milk or coconut milk gives a creamier texture.
- Sweeteners: Maple syrup adds a warm sweetness, but honey or agave syrup work just as well. Adjust the amount to suit your taste.

FAQs
Yes, frozen strawberries work well for the berry layer. Just thaw them first and drain any extra liquid before mashing. The flavor will still be bright and sweet.
Any milk you like will work. Almond, oat, coconut, or dairy milk all give slightly different textures and flavors, so use what you enjoy most.
Of course. Simply reduce the maple syrup or skip the sweetener in the strawberry layer. The natural sweetness from the fruit will still make it taste great.
Store the chia pudding in an airtight container in the fridge for up to 4 days. If it thickens too much, stir in a splash of milk before serving. It’s best served cold, but you can let it sit at room temperature for a few minutes before eating if you prefer a softer texture.

📖 Recipe

Strawberry Chia Seed Pudding with Yogurt
Ingredients
For the Chia Pudding
- 1 cup plain yogurt Greek or coconut yogurt (I use coconut yogurt)
- ½ cup milk milk of your choice (I like to use dairy free milk, like almond, oat or coconut milk)
- 2 tablespoons chia seeds
- 2 tablespoons maple syrup or to taste
- ½ teaspoon vanilla extract
- pinch sea salt
For the Strawberry Layer
- 1 cup strawberries fresh
- 1 teaspoon honey or maple syrup
- 1 teaspoon chia seeds
- ½ teaspoon lemon juice optional
Instructions
- Make the chia pudding: In a medium bowl, whisk together the yogurt, milk, maple syrup, vanilla extract, and salt until smooth. Stir in the chia seeds until well combined.
- Let it thicken: Let the mixture sit for 5 minutes, then stir again to prevent clumping. Cover and refrigerate for at least 4 hours, or overnight, until thick and creamy.
- Prepare the berry layer: Mash the berries with the honey or maple syrup and lemon juice, if using. Stir in the chia seeds and let sit for 10–15 minutes until thick and jam-like.
- Assemble the jars: Divide half of the chia pudding between 2 jars. Spoon the berry mixture over the top, then add the remaining chia pudding if you’d like layered jars.
- Serve or store: Enjoy right away or cover and refrigerate for up to 4 days.
Notes
- Use full-fat Greek yogurt for the thickest, creamiest texture.
- If the pudding becomes too thick, stir in a splash of milk before serving.
- Add crunchy toppings just before eating so they stay crisp.
