    This Chia Seed Pudding with Yogurt is one of my favorite easy breakfasts to prep ahead. It’s creamy, lightly sweet, and layered with fresh strawberries that add a bright, fruity touch. I love how it feels both healthy and satisfying.

    1. Add ingredients to bowl: Add yogurt, milk, maple syrup, vanilla extract, and salt to a mixing bowl.
    2. Mix until smooth: Whisk everything together until fully combined and creamy.

    1. Add the chia seeds: Stir the chia seeds into the yogurt mixture.
    2. Mix again: Stir thoroughly to evenly distribute the chia seeds.

    1. Allow to thicken: Let sit for 5 minutes, stir once more, then refrigerate for at least 4 hours or overnight until thick and creamy.
    2. Blend the strawberries: Mash or blend the strawberries with honey (or maple syrup) and lemon juice until mostly smooth.

    Here are some of my favorite substitutions and variations:

    • Yogurt Options: I like using coconut yogurt for a dairy-free version, but Greek yogurt makes it extra thick and tangy. You can also try almond or soy yogurt for a different flavor.
    • Milk Choices: Any milk works here. I often use almond or oat milk, but regular dairy milk or coconut milk gives a creamier texture.
    • Sweeteners: Maple syrup adds a warm sweetness, but honey or agave syrup work just as well. Adjust the amount to suit your taste.

    Ingredients
      

    For the Chia Pudding

    • 1 cup plain yogurt Greek or coconut yogurt (I use coconut yogurt)
    • ½ cup milk milk of your choice (I like to use dairy free milk, like almond, oat or coconut milk)
    • 2 tablespoons chia seeds
    • 2 tablespoons maple syrup or to taste
    • ½ teaspoon vanilla extract
    • pinch sea salt

    For the Strawberry Layer

    • 1 cup strawberries fresh
    • 1 teaspoon honey or maple syrup
    • 1 teaspoon chia seeds
    • ½ teaspoon lemon juice optional

    Instructions
     

    • Make the chia pudding: In a medium bowl, whisk together the yogurt, milk, maple syrup, vanilla extract, and salt until smooth. Stir in the chia seeds until well combined.
    • Let it thicken: Let the mixture sit for 5 minutes, then stir again to prevent clumping. Cover and refrigerate for at least 4 hours, or overnight, until thick and creamy.
    • Prepare the berry layer: Mash the berries with the honey or maple syrup and lemon juice, if using. Stir in the chia seeds and let sit for 10–15 minutes until thick and jam-like.
    • Assemble the jars: Divide half of the chia pudding between 2 jars. Spoon the berry mixture over the top, then add the remaining chia pudding if you’d like layered jars.
    • Serve or store: Enjoy right away or cover and refrigerate for up to 4 days.

    Notes

    • Use full-fat Greek yogurt for the thickest, creamiest texture.
    • If the pudding becomes too thick, stir in a splash of milk before serving.
    • Add crunchy toppings just before eating so they stay crisp.
