How to Make Hot Honey Halloumi Grilled Cheese
1. Make the hot honey.


In a small bowl, stir together the honey, chili flakes, and cayenne pepper.
Set aside while you prepare the sandwich.
Love it spicy? Add another pinch of chili flakes or cayenne.
Butter one side of each slice of sourdough.
2. Fry the halloumi.


Heat the olive oil in a skillet over medium heat.
Add the sliced halloumi and cook for 1–3 minutes per side, until golden brown.
Remove from the skillet and set aside.
Don't walk away from the skillet here—halloumi cooks quickly!
3. Assemble the sandwiches.


Place two slices butter-side down.
Layer the mozzarella, fried halloumi, and basil on top.
Drizzle with hot honey.
Top with the remaining bread slices, keeping the buttered side facing out.
4. Grill until golden.


Heat the skillet over medium-low heat.
Place the sandwiches in the skillet and cook for 3–4 minutes per side, or until the bread is golden brown and the mozzarella is melted.
The key is medium-low heat. If the skillet is too hot, the bread will brown before the cheese has time to melt.
5. Finish with hot honey.


Transfer the sandwiches to a cutting board.
Slice.
Drizzle with more hot honey and sprinkle with chili flakes.

Hot Honey Halloumi Grilled Cheese
