There’s no searing involved in this recipe. Instead, the honey soy sauce chicken is baked in its marinade and finished with a quick broil. In the end, you’ll have juicy and tender chicken thighs that are perfectly caramelized and smothered in an out-of-this-world sauce.

Ingredients for honey soy chicken

Boneless and skinless chicken thighs are marinated in a honey soy sauce that is both sweet and savory. If you can, use raw honey in the marinade for added nutrients and natural sweetness! These are the rest of the ingredients you need:

  • Boneless and skinless organic chicken thighs
  • Olive oil
  • Fresh ginger and garlic
  • Raw honey
  • Soy sauce
  • Salt and pepper

Combine all of the marinade ingredients together in a large bowl before preparing the chicken.

Recipe tips and variations

  • You can use chicken breasts instead of thighs, but they will need a little less time in the oven. Chicken breasts can dry out easily, which is why I recommend using an internal thermometer to check when they’re done.
  • You can also use bone-in, skin-on chicken thighs to make this recipe. They’ll take about 10 or 15 minutes longer in the oven.
  • Baked chicken thighs and breasts are cooked through once they reach 165ºF.
  • The chicken thighs need at least 1 hour to marinate but can be left for up to 24 hours. Keep the chicken in a bowl with the marinade in the fridge until it’s time to cook.
  • If you don’t have raw honey, regular honey will work just as well.

Storing and reheating leftovers

Cooked chicken thighs make delicious leftovers! Make sure to store them in an airtight container in the fridge for up to 5 days. To reheat, place the chicken in the microwave and cook on high for a few minutes.

Alternatively, bake the leftovers in a 350ºF oven for 5 to 10 minutes or until warmed through.

These chicken thighs were so tender, juicy and delicious!!! The sauce is wonderful! I did use a small amount of ginger powder and it was perfect! Recipe was very easy! Thanks for sharing!!

Absolutely amazing. Im a university student and i used this recipe for my first time cooking chicken and it was brilliant. I left the skin and bone on the thighs (because im lazy) and it still worked, I turned down the oven temp a little because the skin was burning but other than that, definitely using this recipe again.

  5. Can you use ginger powder? If so, how much

  14. Can this be cooked in slow cooker??

    • Hi Megan! I don’t see why not! I would adjust the time to your liking like on high 4-6 hours or low on 6-8 hours. Also I would broil on high for 5 minutes to get that nice caramelized top, totally optional! Hope this help!

Yes I have made this and it was so delicious! Only thing is it is messy to clean up from a cast iron skillet but so worth it.

Made this last night using 2 whole chicken thighs cut into two pieces, and didn’t have time to marinate, so just coated the pieces well, and put them ‘upside down’ in cast iron skillet. Oh, added 1/2 C white wine just for fun. Baked at 350 for 15 minutes, turned them over and basted them, and baked an additional 15 minutes. Came out just like the picture, and the flavor was amazing. Yum!!

If you want the sauce thicker just stir in a little cornstarch slurry after you remove the chicken from the pan

This chicken was delicious! I marinated it for about 1 hour and cooked it a little longer than recommended just to make sure to get a nice carmelized coating on it. I turned it quite a few times during cooking and it was a beautiful color on the outside. My family loved it. It reminded me of a Bourbon Chicken or something like that. It was not a thick “sauce”, it was a thin flavorful au jus. Delicious!

    • Thank you so much Janet, for sharing this awesome recipe review! You are the best! I am so glad you like this chicken thigh recipe, yes the sauce is not thick and yet it is delicious!

  25. I made this tonight and was disappointed. Instead of the gooey luscious sauce nicely coating the chicken like the picture, I got watery sauce and no coating at all on the chicken. It looks really unappealing. I used a glass Pyrex dish to cook it as I do not have cast iron but don’t think it should have mattered.

    • Thank you Mindy for this chicken recipe review!

I appreciate you taking time to write this review!

Did you flip the chicken on the other side few times while baking it?

It helps keep the chicken top moist and juicy! Also you can broil the chicken on high heat for 5 minutes to get that nicely coating and roasted texture on the meat. After baking you can pour the baking liquids over the chicken when serving.

Hope you will give this recipe another try!

      Best wishes,
      Love
