This Honey Chicken Recipe made of local raw honey that I got from PNW Honey Farm, organic skin & boneless chicken thighs, soy sauce, fresh ginger, extra virgin olive oil from Spain, kosher salt and pepper.  It takes about 5 minutes to prepare this dish, one hour to marinade and 40 minutes to bake it, in other words it requires about 10 minutes of your time to make finger-licking chicken thighs for dinner.

To make Honey Soy Chicken Thighs Recipe you will need:

  • 2 1/2 pounds organic skin & boneless chicken thighs
  • 3 tablespoons olive oil
  • 1/2 teaspoon chopped ginger
  • 5 tablespoons raw honey
  • 3 tablespoons soy sauce
  • 4 cloves of garlic, minced
  • salt and pepper to taste
  • fresh parsley, chopped for garnish

How to make Honey Soy Chicken:

In a mixing bowl combine olive oil, ginger, honey, soy sauce, garlic, salt and pepper.

Marinade chicken for at least 1 hour. Place chicken thighs and marinade on a cast iron or baking dish and bake for 35-40 minutes or until chicken is cooked thru, make sure to flip the chicken 1-2 times, that way the chicken will be juicy & tender without dry top. After flip the chicken on the other side and broil on high for 5 minutes or until beautiful dark brown color.

    Made this last night using 2 whole chicken thighs cut into two pieces, and didn’t have time to marinate, so just coated the pieces well, and put them ‘upside down’ in cast iron skillet. Oh, added 1/2 C white wine just for fun. Baked at 350 for 15 minutes, turned them over and basted them, and baked an additional 15 minutes. Came out just like the picture, and the flavor was amazing. Yum!!

  2. If you want the sauce thicker just stir in a little cornstarch slurry after you remove the chicken from the pan

    This chicken was delicious! I marinated it for about 1 hour and cooked it a little longer than recommended just to make sure to get a nice carmelized coating on it. I turned it quite a few times during cooking and it was a beautiful color on the outside. My family loved it. It reminded me of a Bourbon Chicken or something like that. It was not a thick “sauce”, it was a thin flavorful au jus. Delicious!

  4. I made this tonight and was disappointed. Instead of the gooey luscious sauce nicely coating the chicken like the picture, I got watery sauce and no coating at all on the chicken. It looks really unappealing. I used a glass Pyrex dish to cook it as I do not have cast iron but don’t think it should have mattered.

      Did you flip the chicken on the other side few times while baking it?

      It helps keep the chicken top moist and juicy! Also you can broil the chicken on high heat for 5 minutes to get that nicely coating and roasted texture on the meat. After baking you can pour the baking liquids over the chicken when serving.

  5. Thanks for this D’lishYES recipe. I made mine in a glass dish, which I think negatively affected the overall outcome/texture, but I don’t have an ole cast iron skillet nor dutch oven. Nonetheless, the taste was so incredibly good, that I can only imagine how much better if done with the right equipment! I served ours over a bed of jasmine rice with lots of ‘gravy’ over the top and it was AWESOME! This recipe is most certainly a keeper. When I make again and have to include white meat(DH is a white meat only guy) would it be best if I throw in a bone-in piece, as that white meat gets so dry?

    I had to run out to the grocery store to buy more chicken to make a bigger batch.

  7. I love this recipe and has cooked it so many times. I don’t add all the marinade with the chicken at the beginning – but do so every time I flip the thighs. This way the marinade doesn’t burn from the sugar and the there’s extra liquid to pour over the cooked thighs.

      1. I marinated mine overnight and cooked in a skillet in a lil coconut oil. They cooked within 20 minutes. Great! But my heat was a little too high so my sauce burnt a bit. Still good. I wish I could post a pic! I served them over rice with some stir fries carrots and red peppers.
