This strawberry stuffed French toast recipe is so decadent it’s almost a dessert! It’s made with two slices of buttery brioche bread stuffed with a strawberry cream cheese filling, then dipped in a cinnamon egg mixture and pan-fried until golden and crisp on the outside and warm and gooey on the inside!
It’s perfect for a Mother’s Day brunch or breakfast in bed. We top ours with fresh strawberries and whipped cream, but you can pick and choose your own toppings, and then use leftover strawberries to make strawberry pie or a strawberry pineapple smoothie bowl!

It’s made by adding a filling or spread to one piece of bread and topping it with another. The sandwich gets coated in the custard mixture and pan-fried to seal in the filling.

- Butter: Needed for frying.
- For the filling: Softened cream cheese, powdered sugar, vanilla, and sliced strawberries.
- For the topping: Sweetened condensed milk, strawberries, and whipped cream.
How to Make Stuffed French Toast
Step 1: In a medium bowl, whip together the softened cream cheese, powdered sugar, and vanilla. Fold in the sliced strawberries and then set that aside.
Step 2: In a large bowl, whisk together the eggs, milk, vanilla, cinnamon, and salt until well combined.
