Why You’ll Love This Recipe
- Perfect texture. Similar to my fluffy and crispy potato wedges, they’re crispy on the outside, fluffy on the inside, and never soggy!
- Simple ingredients. Potatoes, seasoning, and an easy 3-ingredient dip.
- Minimal mess. Baking in the oven means no grease splatter and heavy oils.
- Versatile. Perfect for a snack, appetizer, or gluten-free side dish!
Ingredients For Sweet Potato Fries

- Sweet potatoes: You’ll need 2 large sweet potatoes. I peel mine, but that’s optional. Cut them into ¼” french fries. If you have a fry cutter, even better!
- Avocado oil: Helps to crisp up the sweet potato fries and gives the seasoning something to stick to.
- Cornstarch: Absorbs the moisture on the surface of the fries which helps keep them extra crispy.
- Seasoning: Salt, onion powder, garlic powder, black pepper, paprika, cayenne pepper. The cayenne is optional!
- For the sweet potatoes fries sauce: Mayonnaise, ketchup, paprika, and salt. You'll love the smokiness the paprika delivers. It elevates the Southwest flavor element.
How to Make Crispy Sweet Potato Fries in the Oven

Step 1: Place the cut sweet potatoes into a ziptop bag. Drizzle with oil, seal the bag, and toss to make sure all pieces are well oiled.

Step 2: Mix the seasoning and cornstarch in a small bowl, then add it to the fries in the bag. Reseal the bag and toss once more until they’re fully coated.

Step 3: Arrange the fries onto baking sheets lined with parchment paper. It’s important to keep the fries in a single layer, with enough room for the heat to circulate, so you’ll probably need 2 baking sheets to prevent overcrowding.
Step 4: Bake in a preheated 425°F oven for 30-35 minutes, flipping halfway.

Step 5: Combine the mayo, ketchup, paprika, and salt in a bowl, and keep it in the fridge until you’re ready to serve your crispy golden fries.

Enjoy the fries warm, fresh from the oven with a side of your homemade southwest dipping sauce. Enjoy!
Recipe Tips for Crispy Oven Baked Sweet Potato Fries
- Cut to an even size. It’s important for ensuring your fries bake evenly.
- Pat the fries with a paper towel. You want to get rid of as much surface moisture as you can.
- Try an ice bath first. Soaking the fries in cold water for 30 minutes first, can help release any extra starch.
- Use the right amount of oil. Too little oil, the fries will burn, too much and they won’t get crispy.
- High heat is important. It’s needed for a crispy exterior!
What to Serve with Crispy Sweet Potato Fries

Eat them as an appetizer with your favorite dip! I love the combination of mayo, ketchup, and paprika, but you could also do something like sriracha mayo, garlic aioli, garlic yogurt sauce, or a tzatziki sauce like I usually have with my sweet potato wedges.
You can also serve them as a side dish on the side of a grilled New York strip steak, baked chicken wings, or a caramelized onion burger.
Recipe FAQs
Absolutely! Much like my homemade french fries in the air fryer, you’ll need to work in batches as it’s smaller than a conventional oven, but they’ll turn out just as great.
I prefer to use avocado oil with such high heat as it does have a higher smoke point than olive oil, but if olive oil is what you have, you can certainly use it. Otherwise, save the olive oil for things like drizzling onto homemade focaccia!
Allow them to cool completely, then store them in an airtight container for up to 4 days in the fridge. I like to line the container with a paper towel so that it can absorb any moisture.
You can! Flash freeze them on a tray until solid and then transfer them to a freezer bag. Doing a flash freeze will prevent them all from freezing together in one large clump.

Notes
- Try to cut the sweet potatoes the same size — I know it’s tempting to rush, but it really helps them bake evenly and get nice and crispy.
- A little cornstarch goes a long way! It’s the secret trick that makes the fries crisp up in the oven.
- Spread the fries out on the baking sheet. If they’re too close, they steam instead of crisp… and we want crunchy, not soggy!
- Don’t forget to flip them halfway — it makes such a difference.
- If you like a little heat, add extra cayenne. If you don’t, you can leave it out completely.
- Want them extra crispy? Leave them in for a few more minutes or pop them under the broiler for a sec. Just keep an eye on them — they go from perfect to burnt fast!
- These fries are definitely the best right out of the oven. They soften as they sit, so dig in while they’re hot.
- And feel free to play with the dipping sauce! A squeeze of lemon or a dash of hot sauce makes it even better.
